Mike has been a culinary professional for over 20 years, having worked in nearly every role within a professional kitchen; from dishwasher and prep cook to line cook, sous chef, and executive chef. His culinary journey began in Anchorage, Alaska, where he gained experience in some of the state’s top restaurants. Five years ago, Mike relocated to Spokane, where he served as Chef de Cuisine at the Mirabeau Park Hotel in Spokane Valley. In the spring of this year, he joined the team at Red Rock Catering as Executive Chef. Since then, he has been instrumental in developing new and diverse menus, bringing a creative and collaborative approach to the table. He takes pride in customizing menus to match the specific tastes and preferences of Red Rock clients, always guided by a positive, “Yes, we can” philosophy. Mike’s culinary expertise spans a wide range of styles, including classic French, Mediterranean, Asian Fusion, Latin, and Pacific Rim cuisines. His preferred approach is fusion—blending traditional recipes with innovative techniques and presentations. Drawing on his diverse background, he creates dishes that are both comfortingly familiar and refreshingly new. Driven by a passion for excellence, Mike’s career goal has always been to be the best at what he does. He approaches every event with that commitment, guided by his personal motto: “You’re only as good as your last dish, and I always strive to surpass mine.”
